DrJ, between DOS attacks, my trouble making comments here (now resolved) and being sandbagged by life, I've been absent a great deal from my favorite political blog. I never did catch up with all the birthday greetings a few weeks ago, and I'm hoping that no one was offended that I didn't reply.

Maple Bacon

Time. 2 hours prep, seven days of curing, 2 hours of smoking.
Makes. About 25 thick slices

Ingredients
1 pound of pork belly
1 1/2 teaspoons Morton's kosher salt
1/2 teaspoon pink curing salt #1
1 1/2 teaspoons ground black pepper
1 tablespoon dark brown sugar
3 tablespoons Real maple syrup
1/4 cup water

FOR A SAVORY CURE, ALSO ADD:
2 garlic cloves, smashed
2 teaspoons fresh thyme
1 teaspoon fennel seed, toasted
1 teaspoon coriander seed, toasted.

FOR A DIFFERENT TASTE, ALSO ADD (INSTEAD OF THE SAVORIES ABOVE)
1/8 cup of jalapeno juice

Adjust if you are doing more than a pound proportionally. It is very important to get the right amount of curing salt/salt/sugar ratios.

Pour everything except the meat into a zipper bag large enough to hold the belly. A 1 gallon bag is fine for a 3 pound slab. Zip the bag and squish everything around until well mixed. Now add the belly, squeeze out the air as much as possible and and squish some more, aggressively rubbing the cure into the belly aggressively coating all sides. Put the bag in a pan to catch leaks and place in the fridge at 34 to 38°F for at least 7 days. If the belly is thicker than 1.5" add another couple of days. More time won't hurt it. The belly will release liquid so every day or two you want to gently massage the bag so the liquid and spices are well distributed, and flip the bag over.

Warning. If you want to do more bacon at once, do not stack the slabs. This will prevent the flavors from penetrating. You need surface area.

Remove the belly from the bag, throw the liquid away, rinse them with cool water removing most of the cure from the surface or it will be too salty. Pat dry.

Smoke over indirect heat at 225°F until the internal temp is 150°F, about 1.5 to 2 hours. You can use any wood you like. Hickory is the tried and true. I'm partial to applewood. You should slice off the ends which may be very dark and more heavily seasoned, and taste them right away. The fat will be a bit stringy, but you'll love it all the same.

Now let it cool on a plate in the fridge. Cold bacon is easier to slice. Slice on a slicer if you have one, or use a long thin knife to slice it. Try some thin and some thick slices. You can also cut bacon in cubes to make lardons and use them like bacon bits in salads, mashed potatoes, mac and cheese, baked beans, in sauces or to garnish chops, or roasts.

Wrap it tightly with several layers of plastic wrap, not foil, and refrigerate for up to 2 weeks or freeze for up to 3 months. Do not wrap in foil because it can react with the salt. When you are hungry, cook it just like you do store bought bacon.

NPR had a clip of the woman running against McConnell this morning. She sounds like a lunatic. I assume NPR thought that was a GOOD clip, which makes me wonder about them, too.

I find it interesting that until last night the tea partiers were portrayed as crazy. Now, suddenly, a lot of dems are sympathetic to how they are being used.

Why, it's almost like they want to stoke up resentment and division or something.

Listened to Tony Katz on the radio last night and he made a good point. It's unrealistic to think you can run for office without the ability to raise money, unless you are wealthy enough to self-fund a campaign. You have to have money to buy tv and radio time, signs, pay for gas, phones, etc.

This is a reason why most challengers lose, and while there is a chance that they can win (Mourdock in Indiana) they then have to raise money for the general, and a lot can't do. it. It is also helpful if, when running against a gregarious Catholic, you don't come off as some stern fundamentalist preacher in the debates.

John Doe update. DA's insurer doesn't want to cover his legal bills. Interesting because so far the government has paid defense legal bills. It is normal for an insurer to sue to avoid providing the coverage you paid for. The interesting part is the insurer is involved at all (unless civil damages are likely to be awarded?).

reminds me that almost the exact same concept was mentioned over the weekend in the Dem State School Super debate where all the candidates just happened to be the same race and gender. A question was asked about the Brown decision anniversary and the complaint was that there was still voluntary segregation by where people live and what houses cost.

I am paraphrasing but this is definitely an area on the Left's radar. When I saw the new TOD apartments being thrown up near Perimeter quickly had a rental sign that said CitizenAtlanta I assumed that was the community organizing # to call to qualify to be part of the % getting discounted rent. No, that was name of co building those apartments that visually seem to come out of a dystopian sci fi movie of sameness.

My late father-in-law was a VA doctor in Shreveport. I wonder if that facility will be in the news soon.

My husband's uncle is a Navy vet, but he has purchased private insurance for years because the VA care is so bad. He's had some serious health crises in the last few years so he's probably alive today because of it.

China just demonstrated the mighty power of President Obama's pen, phone and hashtag by signing a $400 billion gas deal with Russia. Those sanctions are sure teaching Mad Vlad a lesson.

Will future Treasury auctions reflect China's withdrawal from holding US debt? They can make a pretty clean exit in less than three years and they don't need dollars for the gas deal - or damned near any other deal they choose to make.

You might just give it a shot. Alamo is a pretty good company. My BIL makes decent money and enjoys the perks too b/c he's a film freak. Most of the new Alamos have bars/restaurants attached, too, which is a nice treat post-shift. :)

D'Souza shoulda asked to be tried in a Congressional Hearing....a person can break all kinds of laws & even ADMIT it in a Congressional Hearing & nothing happens.

The Congress idiots yell at you & "censure" you...but that pretty much equals nothing happens.

TK, I thought of Romney for the VA, but I'm more convinced than ever that he is going to run for POTUS again. Romney loves a challenge, and the USA in January of 2017 will be quite challenging. Romney also has an in your face streak in him, and the prospect of Obama needing to turn over the reins to him would be an added incentive.

Recently I read that Romney supported an increase in the minimum wage. Think what you will of the Mittster, but he is smart enough to know that is a jobs killer. I think Mittster is already maneuvering to get more of the "feeler" vote in 2016. I can't imagine Romney supporting a minimum wage increase unless he is planning a 2016 run.
