However, it fails as an attempt to change minds on the right by failing to notice that these social media death threats have moved to the real world on the left as well as the right. Could he have mentioned that Republican Congressman were exposed to actual gunfire by an aggrieved Bernie-bro, not just nasty comments on someone's blog? Could he have found any number of examples of righties getting death threats from the left, including Brett Kavanaugh's family?
Of course he could have. But when faced with a choice between criticizing his own tribe as well as the other, he backed down. Utterly predictable, yet disappointing.

Brining is the way to go, Jane. After that, Alton recommends coating the bird with butter and starting the roast at 500F, then putting a heavy-duty foil "breastplate" on it after the skin is nicely browned and going 350 the rest of the way. Comes out great every time.
I knew some Puerto Ricans many moons ago who would use hypodermic syringes to inject wine into the turkey, which also turned out quite good.
(One of them was a nurse, I think.)

We bought an oil less fryer for turkeys and absolutely love it. Just some cajun injection under the skin and into the breast, and put it in and set it for the weight. Auto cooks and shuts off when done. Super juicy!
And no messy clean up or oil to dispose of. And no fireman visiting when frying a turkey and it wasn't quite defrosted yet.
I use the drippings to make the gravy with a bit of an add of more turkey stock and then add whatever else you want to put in the gravy and all done. I like lots of boiled egg and the giblets from the inside.. just saute and dice and add plus a bit of the meat from the bird.
Nice thing is you can use it on the back deck/porch and not have the house heat up to 200 degrees when all the company arrives. Saves the oven for casseroles, too.
You can also use the oil less fryer for prime rib or pork roast, and it is just as juicy.

I was a big fan of Alton's when we used to watch Food Network. Learned a lot from him. Even bought one of his books.
He thinks of the science of cooking. The why, as opposed to simply following recipes.
After watching him, I actually spent several years reading On Food and Cooking: The Science and Lore of the Kitchen, two or three pages a night to get to sleep. Great book.

Our smoker is simple: an electrical resistance heater with chip tray at the bottom, and an aluminum barrel above it. There is a pan or two to catch drippings.
I drench the chips -- usually a mix of cherry or apple and a darker wood like mesquite -- and then heat to where the chips steam. So it is as much steaming as smoking, I suppose, and that's what keeps it moist.
It works well.

In the backyard, there was a concrete slab, about 4x4'. I deep fried a few things there, and I think that was the whole point of the slab.

My son's in laws fry about a dozen turkeys for various friends and relatives and have a rig set up in the back yard with a stainless steel rope between two trees and a pulley system on it to raise lower their turkeys. Can't be too careful.
I can't tell the difference between the oil less and the ones he does - he used to do one for us every year til I got the new toy. Now if it is bad weather, I just put the oil less on the covered deck and no messing with mud/snow/etc.

This past week I brined two turkey thighs and roasted them in the oven, let them cool, shredded them, mixed in homemade roasted tomato chipotle lime salsa and made enchiladas. Drank a ‘14 Maison Leroy Montagny with them...
(Okay, not really. I ordered that bottle last Sunday at The Ram in Sun Valley village for Mrs lyle’s b-day. The bottle arrived promptly. The rest of the dinner not so much. To say the service was a disaster is an understatement. The manager comped the food, I paid for the wine sans gratuity and walked out two and a half hours later.)

Hey lyle, I stayed at the Sun Valley Lodge last year on my way from Jackson Hole to Boise. While there, I saw one of the funniest things I'd ever seen.
A troupe of girly-boys being drilled in figure skating. After noticing this scene, I really couldn't control myself except to take a short video before losing it watching these twinks.

That’s my stomping grounds, Ext., for 30+ years. I have a very funny story involving Brian Boitano practicing for the ice show that I’ll share one day. NB for everyone unfamiliar with Sun Valley: they put in an ice rink when the lodge was built in ‘38. Ice shows are still a big thing to this day, drawing the best talent on earth. Not necessarily my thing but it’s a big deal to the tourists, believe me.
